Lactose is a disaccharide that makes up around 2-8% of the solids in milk. Also referred to as "Milk Sugar" is great for sweetening your brew. Lactose is not fermentable, so will remain intact in your brew, allowing you to add sweet flavors without having to prematurely stop the fermentation processes to leave a larger amount of malt or sugars, lowering your alcohol content.
